In this interactive class and tasting, we’ll break wine down into its essential building blocks and explore what “structure” in wine is and how it feels using familiar, everyday ingredients you already understand. Through guided sensory exercises with items like black tea and fresh lemons, you’ll experience tannin, acidity, body, sweetness (or dryness), and alcohol in a tangible, intuitive way.

From there, we’ll bring it all together by tasting wine and applying these sensations in real time, giving you practical understanding the next time you’re searching for that special bottle to serve with that special dish. Designed as an accessible introduction to wine tasting, this class is welcoming to all levels, from curious beginners to seasoned drinkers looking to deepen their understanding. No prior knowledge required, just curiosity and a willingness to taste.

The class is led by Linda Milagros Violago, a first-generation Filipina and global hospitality professional with over 30 years of experience in restaurants across 13 countries. Most recently, Linda made history as the first woman to lead the wine program at Seattle’s Canlis restaurant. She also collaborates on creative food and wine projects through her consulting practice, Grazing a Trail.
